Was it Will & Kate's Royal Wedding announcement

Was it Will’s & Kate's Royal wedding announcement or the popularity of our pet friendly Salcombe holiday cottages and hotel accommodation that got the phones ringing ?
We have just finished our 20th season at Port Light. This year has probably been the most testing one yet. Market trends are changing quicker than we can keep up with them. The next 12 months will be the survival of the fittest. We are well placed to weather the storm and continue to provide memorable holiday at Port Light and Bolberry Farm Cottages. It does appear that the economic climate is helping the South West Tourism industry with more visitors staying in England but they are booking at the last minute which can cause havoc with staffing. The cottage bookings are well ahead on
previous year with Daisy cottage being full over the summer holidays. The larger bedrooms at the hotel are also filling faster than normal.
The festive season is nearly here with just a few rooms free for the post Christmas break when we will be introducing new items to the menu. There is just one room free for the New Year break which includes the New Years Eve party with music to dance. Reservation for Christmas lunch are just about filled with New Years Eve close behind as we limit
tables to give us the conservatory to dance in. The cottages are full apart from Buttercup (2 bed) being free for the post Christmas break.
The hotel is closed at present for maintenance but the cottages remain open. We are
offering short breaks @ £170 per cottage which have proved very popular. The hotel re opens on the evening of 23rd December until after breakfast on 2 nd January. We are then closed again until 18th February, all ready for our 21st season. 3 night breaks are @ £169 pp for Dinner Bed & Breakfast.
The new suites arrived for the cottages and we are trying to paint each cottage before Christmas. Quality self catering is the way forward and this has been backed up by South West Tourism. By keeping our cottages to a very high standard whilst welcoming pets our guests respect the property and are happy to recommend them and return themselves.
Dave (chef) is back in Tasmania but returns for the festive period. Paul & Jamie are also back for the festive period. Emily (oldest daughter) has also been roped in as by the
bookings taken, it is going to be a fun busy period under the watchful eye of Hazel.
This year has been a great year for Visit South Devon and the Tourist Information Centres with a variety of press coverage promoting our special area. The Mitch Tonks Crab
campaign saw our crab sandwich and salad sales rise with many guests having never
sampled Devon Crab. I am heavily involved with Salcombe Information Centre and are passionate about its existence and importance to visitors “on the ground”. Without these
vital self funding offices, our visitors and locals would be lost for information. Courtesy of Visit South Devon, they will be distributing a leaflet which I designed promoting Salcombe and the area at the BBC Good Food Show at the N.E.C. I am convinced this is an ideal
platform to promote our area.
Our Parish Councils appear to be more forward thinking and have realised that unless we move on with new trends in Tourism it will die. We have already seen many pubs hotels and restaurants close down in the area. A good mix of quality venues is important for the area as it gives visitors a choice. Whilst it appears we will have a good 2011 season we must be very mindful that other areas in the South West are also improving their facilities and raising the customer experience. We must not get complacent and get left behind by competitors having better facilities, although they cannot match our scenery.

A celebration of Devon crab





A CELEBRATION OF DEVON CRAB
Here in Devon we have the best crab to be sampled in the world. It is unique in its sweet flavour and can be created into many wonderful dishes. Having spent many hours as a boy catching crabs in Bigbury Bay and picking them out for the many restaurants and inns, I have a pasion for this unique local product from the sea and encourage young and old customers to join in sampling world class crab with us.
Our Famous crab Bolberry Busters Sandwiches have been enjoyed by customers from all over the globe. This unique "meal in its self" is made with lightly buttered brown bread with a top layer of crisp local salad and the bottom layer a mix of sweet Devon white crab meat and the tasty rich brown meat. We do not add mayonnaise, vinegar or salt and pepper, which we think spoils a beautiful product, but offer it as an accompaniment so that guests can decide on their own personal preference.
There is no "correct" method of preparing a crab sandwich which makes every sandwich unique.


At Port Light we serve Devon crab in many forms.
Our rich crab bisque is made from a closely guarded recipe which was gained from one of the fishermans wives in Hope Cove when I was a boy. I was taught to make it using spider crab which has a stronger flavour than brown crab, but now we always use Devon brown crab.
Our crab salads are made using the best local crab with nothing added !
Crab cakes are widely available in many local restaurants and inns but sadly, many are "bought in" for convenience. We are proud that ours are homemade every day using our quality crab with a few secret ingredients added to give the unique flavour.

A cook's Tour of England by Maurice Hassall

As many of you know, my Dad is one of the last "Old School" classic chefs. He is a past examiner
for City and guilds of London Institute, and the Hotel Catering and institutional Management association. Chairman of the Judges, at International festivals of culinary arts. He was also Head of catering at Plymouth College of Further Education before he took on the challenge of Hotelier which he did for 20 years ! He is now retired in Cyprus and spends his time writing about food and looking for new ideas as well as watching some on the new food trends with a smile on his face, sometimes with disbelief !! I therefore think he is experienced enough to get involved with my thoughts on the Great Devon Crab crusade. I told him about my conversation with Mitch Tonks and his enthusiasm about promoting Devon Crab, Dad has now got excited and has been talking "Crab" for the last 7 days, having returned to Devon for a holiday. He referred me to an extract in his recent book:
Seated around the gnarled round wooden table were about ten fisherman all wearing baggy trousers and with knives strapped to their legs. Each man wore a dark blue polo-necked thick oil wool hand kniotted pullover and heavy full-length boots that fought for a place under the table. They were singing words about life spent at Sea in a cornish dialect whilst cracking open a mountain of boiled Crabs scattered over the table. I knocked on the door ! " Come in me 'ansome and take off your wet clothes". I had only ever had an offer like this before when I visted a Gorl Guides camp! Then these kind fishermen made me a Crab sandwich. A thick round of bread was plastered with Cornish butter, piled high with white Crabmeat then a good layer of darl body meat. Only the dead men's fingers and sack had been discarded. no refinements like serving the meat with mustard, salt, pepper and vinegar and adding soft white breadcrumbs. The meat went directly from the shell to the top of the white meat. " we do not put salt, pepper and vinegar on our tasty crab like those foreign English people from up the line" said one of the cornish fishermen. He knocked back another pint of cloudy white Scrumpy and I was given directions to the youth hostel.

This is another example of how Devon crab can be enjoyed !

I told Mitch Tonks I caught Crabs in Hope Cove !

Sorry, and I accept slapped wrists from all those friends and customers who keep telling me I have not updated my blog. I did not think anyone read it ! but now I understand it is essential addictive life reading for the friends of Port light Hotel and Bolberry Farm Cottages that know me. Some cringe with the legal implications and some roll around laughing at my devilment. Some say "I shoot from the hip" but do I care ? Absolutely NOT !!!!
The season started of very quickly and we were soon thrown into a very busy season. "Touch wood" we have a great team this year. Dave is nearly back on form although it is obvious that the "Butcher of Derriford" has disabled him for life. Our food side of the business has increased this year. This is due to our competitive pricing and providing food to eat and not to photograph !
The bar alterations are now complete with new windows overlooking the helicopter pad and new Windows in the main bay window area. I grew to like the silver gaffer tape on the old Aluminium windows, but it was getting embarrassing when we had hot weather and could not open the windows ! We have now finally got involved with Visit South Devon, yet another national led sort of government backed organisation. They have vastly more money behind them than our brilliant Local SELF FINANCING Tourist information centres but I hope this time they do not disappear and evolve again in a few years time. The staff at V .S.D. appear more aware of the Tourist I. C. and are willing to work with us. For this reason, Bolberry Farm Cottages and Port Light Hotel & Inn have both signed up. Part of Visit South Devon's networking involves social events like the one we recently had at Blackpool Sands near Dartmouth. It was a great event which was to launch the Devon Crab campaign. Hazel sampled oysters for the first time and actually enjoyed them ! The crab was great and evening very informative and interesting. As those who know me very well, when I was a boy of just 12 I started catching Crabs in Hope Cove. At the age of 14 I was exporting 6 tea chests of Spider crab per week to the French, whilst picking out 50 lbs of crab meat per week to supply the local restaurants and my Dads hotel Sand Pebbles. I also supplied many restaurants with Lobster. As I was so young, my big brother David Hassall was the registered owner of my fishing boat and I was the skipper. It was all very legal with my numbers displayed proudly on the bows of my boat. Crabs were my life and a huge money earner although during the summer holiday my 6 am to 9pm fishing trips wrecked my back ! At the age of 16 the french export trade had died as they had purchased all of our female Spider crabs and now had their own stocks. Girls now came on the scene and whilst it was "cool" to come on my boat and catch lobster and Crab ( what a chat up line, but it always worked with the tourists !!!!!!) they did not like the constant smell of picked Crab ! Fishing came to an end !
In 1991 we launched the Crab Bolberry buster which is a double Decker sandwich with a filling of the best Devon Crab supplied by Moby Nicks in Plymouth. These amazing sandwiches are now famous the world over. We now sell many hundreds of pounds in weight of Crab per year in various different forms and are very proud of the success. There is a lot of "Crap" Crab served which puts consumers off the product, especially the brown meat. The great thing about Crab sandwiches is that everyone has a different opinion on how this local Devon delicacy should be made. Mitch Tonks likes his on white bread with cucumber Mayonnaise and pepper ! If I served this i would get it sent back but it is one of those dishes when everyone is correct in the way they serve it as long as they savoury this unique wonderful flavour of Devon Crab. It was inspiring to find a person like Mitch, who was as passionate about Crab as I am. I would confidently say "you have not lived" unless you have tasted Devon Crab. My wife being from the fishing capital of the North, "Wolverhampton" and her relatives have all been converted into the superb experience of coming out on my fishing boat, catching Crab and eating it on the same day. What a life experience. The Visit South Devon Crab campaign has rekindled my excitement with Crab and has launched Port Light forward in re educating customers in the delights of Devon Crab.

Too damage a local community

It has been a while since my last blog but many things have happened. The holiday in the Canaries was great. however we did not the worst gale in 50 years which was the tale end of the Madeira gale. It was like a very bad gale at Bolberry Down, but we are fully equipped for such weather ! We opened the hotel later this year due to our holiday. I am told we did not miss much business as the area was quiet, probably due to the weather. We opened on 22nd Feb with a full hotel ! it has almost remained this way since, which is very encouraging for the season ahead. This season Dave is back at full spreed, Paul is multitasking as usual. Sonny has returned after 8 years and we have an English female second chef who Dave is very pleased with.
As usual, when we re open we place signs in Malborough and near Hope cove just for 7 days to let everyone know we are open. The Parish Councils are now very forward thinking and understanding having realised the need for these slight breaches in Planning rules.. The sign near Hope Cove proved very entertaining. the local farmer decided that he was going to remove it every time I put it up! The none drying paint was fun but did not deter them. In the end he "through his toys out of the cot" and told another hotelier that if he did not sort it out , he would remove his illegal sign off this gate. Some would say this is "blackmail" I would say childish stupidity ! However, things came around to our advantage as the someone sent a copy of the letter, I had sent to the farmer, around the village ! This got everyone talking and we have a lot of very busy lunches as customers wanted to find out more ! What the saying? an ill wind !

Anyway, here is the letter I sent for those who have not seen it !

Dear Alison & Barry,
The sign issue at the top of Burleigh Lane has now become the centre of gossip and speculation with the two parishes. As you are aware, I always put this sign up for just one week when we re open. Alison has been seen interfering with our signs. This section of land is owned by highways and you had no right to
remove the sign. Under the “Theft Act 1968” you have committed an offence. Whilst I understand that you have never achieved anything in life, I can only assume that this action was carried out in a desperate
attempt to gain some power to achieve something. I fully understand that the sign contravenes the “Town & Country Planning Act 1990” of which I am very well read in this area of law ! May I draw your attention to the fact that you have been contravening this act for many months in allowing signs to be displayed on your property illegally, so it cannot be that you are passionate about the appearance of the Countryside.
Your actions have resulted in several e mails and telephone calls asking what is going on and fellow traders keen to advise that it is not them being childish and removing or defacing the signs. The owners of the Sun Bay are very good friends and your thoughtless actions could have damaged friendships within the village. The owners of the garage sale sign which was also removed will also be saddened by your un neighbourly action.
The villagers are now discussing with concern as to what retaliation I may take, as those who know me are aware that I protect my business interest which great force. However, with the knowledge of yourselves
being covered in non drying paint and the public humiliation you will suffer due to your childish
irresponsible actions, I feel that retaliation has already been achieved ! Further more, your actions have started many locals discussing the issue and therefore the word has spread that we are open. A better advert than the signs or press coverage ! I will be also very interested at any other breaches in legislation which you are in contravention of in the course of your business. Please be assured that as a good citizen, I will report any issues to the relevant authorities.
A copy of this letter will be e mailed to all those who have shown concern and interest, and also it will be placed on our Port Light blog site for the wider public to understand that it is not always young people who have difficulty living in the community without being underhanded and vindictive

Dave is about to re design the middle of the Car park flower bed having been delayed due to his "hiccup" in health last year. It will improve parking and look great. My 21st Mothers Day at Port Light is nearly here and bookings are as good as ever. It will be all hands on deck as usual.
The new design in our bar/restaurant layout has proven a huge sucess. Anglian will be here after Easter to install the new windows to complete the Job.

Even the loo is not a telephone escape!!

It has been a few days since my last entry. I have still not got around to writing the press release for the Dog mag, but it is nearing the top of the list!!! on the roll of wallpaper ! I am heavily involved with the Tourist Information management team and we are fighting our corner to unite the local 5 T.I.C's and putting forward a local bid for a marketing grant. Visit Devon group, which are the latest bunch of government appointed so called "experts " are desperately trying to get all the tourism establishments to sign up with them. As we have experienced before, this is expensive and brings in little business. They promise great things! We will wait and see ? As I have mentioned before, the Tourist information centres are largely self funding and rely on advertising. Collectively, we will all be a strong force in both promoting tourism and also looking after the visitors when they get here. We are now closed until 23rd February, but so far I have taken about 3 days off. We are answering calls and so when not at Port light, all calls are diverted to my mobile. We have never been so busy with bookings and as much as we need them the phone always rings when I am having a wee! much to amusement of others if I am away and in a public toilet ! However keep ringing as space is already becoming very limited.It does appear that people are staying in the UK for their holidays. In our recent news letter which is now on our Port light "news & offers" section we asked previous guests to e mail us with their details. so far we have 396 people who want out e news letters. I tend to waffle on a bit, however all but one person enjoyed the content. The one lady who kindly e mailed her thoughts on my writings has caused great amusement from Friends and family who read her response. We are going to save it and publish in "The book" when I start to write it. I am sure it will make readers chuckle !I have been down at the cottages laminating Clover lounge and re painting the walls. unfortunately Hazel keeps taking bookings for the cottages in January so it is then a mad rush to get the cottage back together. The weather is now superb and about 12 degrees outside with no wind and lots of sunshine. Although it is very wet underfoot, it is great to walk the cliff paths as the scenery is great due to very clear skies. Hazel went shopping with Emily for her Prom dress today and I took the screamers ( our affectionate name for Ella & josh) down to Soar mill Cove. Sadly we found a Deer which had fallen over the cliff and died. Josh could not wait to tell Hazel he had seen father Christmas Reindeer but it was dead !! a good excuse for no presents next year! We are counting the days off until we go out to the Canaries on 6th Feb. Although I am dreading the flight with Ryan air and the euro rate which makes things very expensive it will be great to switch off. Jo, our friend will be manning the e mail and phones again. I have promised not to check any business e mails or answer my phone, but we will see!! Hazel tells me I have lost the ability to switch off from work ! The phone is ringing again so I will have to go. until next time.

from doggie fashion to doggie holidays, i'm the expert !

I am not sure if an accolade in all things doggie is a complement or not. Having spent the last 20 years perfecting perfect pet holidays I am now being asked to write article on this subject. However, being the longest established tourism trader in the South Hams in their own right and having traded in two recessions with great success I feel I am well qualified to comment on most Tourism issues especially Pet holidays, be it hotel & inn or self catering. During my 20 year journey through red tape, selfish short sighted Councils and jealous locals I have experienced many kinds of friendship both true and false. The most unlikely people have become true Friends and the most unlikely have stabbed me in the back. The later I salute with "2 fingers". Myself along with Hazel my patient understanding wife, have put our hearts in Port Light and Bolberry Farm Cottages and in return loyal customer have supported us spending their hard earned cash ! We thanks you. The result is highly respected businesses and many satisfied customers world wide. Staff have been a big influence on how I treat and see people in life. Perhaps it is not a good thing to treat staff as friends, but through this unprofessional approach I have many staff which have become great Friends and part of the Port Light family. Staff from the past include Ben Chambers who worked for us 8 years ago and returned this year to help us out when our chef (friend, child minder and general family member) was "butchered by a careless surgeon at Derriford hospital. Ben has just started another life experience travelling the world. (see his blog http://www.benchambersroundtheworld.blogspot.com/) WARNING : this blog may contain adult content but is well written and surprisingly humorous !
Matt walker our neighbour (our only neighbour apart from my Friends the Sheep,Rosy, Win, Lucy, Ethel, Nina, Betty............................... and so on !) is now enjoying stardom on "Deal or no Deal", his game is on 2nd Feb but I am led to believe that the 23 Jan is an interesting show. After Matt's appearance Bolberry Down will soar in the google ratings !
The snow is flickering down and the north East blows it is -4 outside, unheard of at Port Light. However with the cost of gas I am considering sitting in the fridge and putting the frozen food in my armchair ! I was going to start my article for the press on Pet freindly holidays but have got carried away again. I have to travel to "the Darkside" a place back in time with strange elf like looking people who live on white Cider, scones, clotted cream and Ginsters pasties. Some call this county Cornwall. well worth paying £1.50 to escape back into Devon on my return. If I do not get held up by Donkeys in the road, or highwaymen I will continue with my Tourism article later.
